The Wellness Science application is careful to not store any Personal Identifiable Information (PII) data with your wellness data. If you desire to have an AI help you interpret the result, then the results of your analysis are sent to a service. But the results that are sent only have the type of the analysis (e.g., blood pressure) and the statistical results. And the external service will only store your upload if you give permission for use in generalized statistics for the type of analysis.
